It is soy sauce to be re-prepared for Inishi.
I used mashed mash that has been aged for a year and squeezed it out of the mash to replace salt water, and then added koji and let it sit for over a year.
The ingredients are doubled and the aging period is doubled, so it is a luxurious soy sauce with a rich and deep flavor.
It is the finest soy sauce in our shop, made only of soybeans, wheat and salt, and without any additives.

It can be used for such dishes.
Sashimi, cold tofu, carpaccio, yakimochi, sushi, sashimi Don't put too much on it.
It's OK even if it's brushed.Suitable for fat fish toro and yellowtail.
